More than just a traditional cornbread, this sweet, creamy, corn-based casserole is packed with other delicious ingredients, like bell pepper and scallion, but is just as easy to make.

Ingredients
- 6 Tbsp. butter, melted, plus more for greasing pan
- 1 (14 3/4-ounce) can whole-kernel corn
- 1 (14 3/4-ounce) can cream-style corn
- 1 (7-ounce) box cornbread mix, preferably Martha White Sweet Yellow Cornbread & Muffin Mix
- 6 scallions, white and green parts, finely chopped
- 2 large eggs
- 1/2 green pepper, seeded and diced
- 1 1/2 tsp. Creole seasoning, plus more to sprinkle on top
Directions
- Step 1Preheat oven to 400°F. Meanwhile, butter a 9- by 13-inch baking dish and set aside.
- Step 2In a large bowl, combine all ingredients. Transfer batter to prepared pan. Sprinkle top with Creole seasoning. Bake casserole until golden brown and bubbly, about 45 minutes.
