These ice pops have some serious flavor that’ll keep you cool this summer. With fresh blueberries, apple juice for some sweetness, and fresh ginger for a little kick, it’s like a refreshing and delightful fruit punch in frozen form. Enjoy these on the back porch on warm days, or serve lakeside after a day on the water. There’s no wrong time to enjoy these fruity treats.

Ingredients

  • 2 1/2 cups fresh blueberries
  • 3/4 cup apple juice (preferably unfiltered), well shaken
  • 1 Tbsp. finely grated fresh ginger, from one 1 1/2-inch piece
  • 1 Tbsp. fresh lemon juice

Directions

    1. Step 1Combine blueberries, apple juice, ginger, and lemon juice in a blender. Blend on high until smooth, about 2 minutes. Pour into 10 3-ounce ice pop molds and add sticks. Freeze at least 6 hours and up to 3 months.
