- 1 (10.5-oz.) package frozen diced sweet potatoes
- 3/4 cup chopped sweet onion
- 3 Tbsp. extra-virgin olive oil
- 3/4 tsp. smoked paprika
- 2 Tbsp. grated Parmesan
- 2 Tbsp. sliced fresh chives
- Kosher salt
- Freshly ground black pepper
Directions
- Step 1Cook sweet potatoes and sweet onion in olive oil in a large nonstick skillet over medium-high heat, stirring often, until golden brown, 12 to 14 minutes.
- Step 2Stir in smoked paprika and cook, 1 minutes.
