Carter’s Cast-Iron Coffee-Chocolate Cake

In Yellowstone's season 4, episode 8, John, Beth, Rip, and Carter are having dinner together in the lodge dining room when Beth and John argue, and she storms away, with Rip close at her heels. 

John takes the opportunity to scrape the salad back in the bowl and take a big piece of steak for himself. Carter takes a massive scoop of the cake right out of the center and plops it onto his plate and on top of the steak. 

The nice thing about this cake is that you can mix the entire batter in the skillet that you bake it in. If you find yourself grilling outside for ranch hands, simply place the whole pan on the grill over indirect heat.

Ingredients

For the Coffee-Chocolate Cake

  • 1 cup all-purpose flour
  • 1/2 cup natural cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 cup unsalted butter
  • 1/4 cup vegetable oil
  • 3/4 cup (4 ounces) semisweet chocolate chips
  • 1 cup granulated sugar
  • 2/3 cup freshly brewed coffee
  • 4 large eggs
  • 2 tsp. vanilla extract

For the Glaze

  • 3 Tbsp. unsalted butter
  • 1/4 cup natural cocoa powder, sifted
  • 2 Tbsp. freshly brewed coffee, plus coffee as needed
  • Pinch of kosher salt
  • 1 cup confectioners’ sugar, sifted
  • Vanilla ice cream for serving

Directions

    1. Step 1Preheat the oven to 350°F. 
    2. Step 2To prepare the cake, in a bowl, whisk together the flour, cocoa powder, baking soda, and salt to blend. In a 10-inch cast-iron frying pan with 2-inch-high sides over low heat, melt the butter with the oil. Remove from the heat and stir in the chocolate chips until they are just melted. Whisk in the granulated sugar, coffee, eggs, and vanilla. Add the flour mixture to the chocolate mixture in the pan and stir gently to combine. 
    3. Step 3Transfer the frying pan to the oven and bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes. Transfer the frying pan to a wire rack and let the cake cool. 
    4. Step 4To prepare the glaze, in a small saucepan over low heat, melt the butter. Remove from the heat and whisk in the cocoa powder, coffee, and salt. Add the confectioners’ sugar and whisk until smooth. The glaze should be thick but spreadable; if it is too thick, add a little more coffee, 1/4 teaspoon at a time, to reach the desired consistency. 
    5. Step 5Pour the glaze over the cake and spread it evenly, using a small spatula. Let stand until the glaze is set, about 1 hour. 
    6. Step 6Serve wedges straight from the pan, ideally with a big scoop of vanilla ice cream.
