White Chocolate Pomegranate-Pistachio Bark

The burst of tart juices combined with the sweet white chocolate creates a balance of flavors in this perfect-for-the-holidays bark. To gift these, line a box with parchment paper or a new tea towel or napkin and fill with bark. You can also give small portions in gusseted clear plastic bags. Either way, be sure to tie it up with a pretty ribbon.

Ingredients

  • 8 oz. white chocolate, chopped
  • 1/4 cup pomegranate seeds, plus more for sprinkling
  • 2 Tbsp. roasted pistachios, chopped, plus more for sprinkling

Directions

    1. Step 1Line a rimmed baking sheet with parchment paper. Melt chocolate in microwave-safe bowl on high, stirring every 30 seconds, until smooth, about 1 minute. Stir in pomegranates and pistachios. Pour on prepared baking sheet and smooth with an offset spatula. Sprinkle top with pomegranates and pistachios. Freeze until firm, 25 to 30 minutes. Break into pieces. Refrigerate in an airtight container up to 1 week.
