air fried baked potato

Ah, potatoes. There's a reason that they're such a staple side dish. There are dozens of ways to cook potatoes, from mashed to roasted, to sliced into fries. But there's nothing more classic—or delicious—than a simple baked potato split and steaming hot, dressed with sour cream with perhaps a few chives or some Cheddar cheese.

Most of us bake our potatoes in the oven, but unless you need a dozen baked potatoes (or are roasting a chicken at the same time), it can be a waste of time and energy. Enter the air fryer! A 3.5 quart air fryer can easily fit four medium-sized russet potatoes in its basket, will preheat in just minutes, and (best of all) the circulating air results in a deeply crispy potato skin while keeping the interior just as fluffy and tender as you'd want. In fact, the air fryer makes such good baked potatoes, it may be worth buying one just for that reason alone!

Ingredients

  • 4 medium-sized russet potatoes
  • 2 Tbsp. canola oil
  • 1 1/2 tsp. kosher salt

Directions

    1. Step 1Preheat air fryer at 400°F for 4 minutes. Pierce potatoes with a fork or paring knife, then place in a bowl and toss with oil and salt to coat.
    2. Step 2Place potatoes in a single layer in the air fryer basket and cook, 20 minutes. Flip potatoes and continue cooking until a knife slides through with no resistance, 15 to 20 minutes.
