The sweet, floral flavor of good honey makes this pound cake extra special.

Ingredients

  • canola oil for loaf pan
  • 1 cup (2 sticks) butter at room temperature
  • 1 1/3 cups sugar
  • 1/4 cup Honey
  • 5 large eggs
  • 2 tsp. vanilla extract
  • 1 3/4 cups flour, sifted
  • 1 tsp. baking powder
  • 1/2 tsp. salt

Directions

    1. Step 1Preheat oven to 325°F. Lightly oil a 6-cup loaf pan. Beat the butter, sugar, and honey together using a mixer set on high until very light and fluffy, about 3 minutes. Beat in the eggs, one at a time. Add the vanilla extract. Add the flour, baking powder, and salt and beat until smooth.
    2. Step 2Spoon into the prepared pan and bake until a skewer inserted into the center of the cake comes out clean, about 1 hour. Cool 15 minutes before unmolding

Tip: Try deeply flavored leatherwood honey, from Tasmania, for a richer cake.
