Air Fryer Chicken Thighs with Mustard, Garlic and Rosemary Sauce

These fast-cooking thighs are a flavorful weeknight staple.

Bone-in chicken thighs are some of our favorite cuts to cook when making a chicken dinner. Because they have more fat and connective tissue than lean breasts they come out moist and juicy every time. Make a double batch of the sauce and use it to dress a simple salad.

Ingredients

  • 3 Tbsp. olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. chopped fresh rosemary
  • 1/4 tsp. crushed red pepper
  • Kosher salt and freshly ground black pepper
  • 8 small bone-in, skin-on chicken thighs (about 2 1/4 pounds)
  • 2 garlic cloves, skins on
  • Oil in mister

Directions

    1. Step 1Whisk together oil, lemon juice, mustard, rosemary, and red pepper in small bowl. Season with salt and pepper.
    2. Step 2Preheat air fryer to 400°F. Place chicken, skin sides up, and garlic in air fryer basket. Spray chicken skins with oil, and season with salt and pepper. Air fry in batches, removing garlic halfway through, until chicken is cooked, 20 to 25 minutes.
    3. Step 3Remove garlic from skins and chop. Add to lemon juice mixture, and stir to combine. Serve chicken with sauce.
