When your garden—or farmers’ market—is overflowing with ripe tomatoes, this simple spaghetti is the recipe you'll come back to again and again. Grating fresh tomatoes creates a silky, vibrant sauce that comes together in minutes with pantry staples like garlic, olive oil, and pasta. The result is a fresh, flavorful dinner that's perfect for warm summer evenings when you want something delicious without spending hours in the kitchen.

Ingredients

  • 1 lb. spaghetti
  • Kosher salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 2 cloves garlic, chopped
  • 2 1/2 lb. red heirloom tomatoes, grated on the large holes of a box grater, skins discarded
  • 2 sprigs basil, plus more for serving
  • Grated Parmesan cheese, for serving

Directions

    1. Step 1Cook spaghetti in a large pot of salted water until al dente; drain. Set aside.
    2. Step 2Meanwhile, heat oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute. Increase heat to medium-high and add tomatoes and basil. Season with salt and pepper. Cook, stirring occasionally, just until warmed through, 2 to 3 minutes. Add spaghetti and toss to coat.
    3. Step 3Serve immediately, topped with Parmesan and basil.
