Sesame Chicken Meatballs

Trying to decide between meatballs and takeout for dinner? Now you don't have to! This delicious recipe is a great way to turn a package of ground chicken into a satisfying and easy weeknight dinner, without the expense of delivery!

Ingredients

For meatballs:

  • Cooking spray
  • 1 lb. ground chicken
  • 1/3 cup chopped scallions, plus more for garnish
  • 1 large egg, beaten
  • 1/4 cup plain breadcrumbs
  • 1 1/2 tsp. garlic, finely chopped
  • 2 tsp. toasted sesame oil
  • 1 Tbsp. low-sodium soy sauce
  • Freshly ground black pepper

For sauce:

  • 2 tsp. cornstarch
  • 1/4 cup chicken stock
  • 2 Tbsp. low-sodium soy sauce
  • 1 1/2 tsp. garlic, chopped
  • 1 1/2 tsp. ginger, chopped
  • 1 Tbsp. unseasoned rice vinegar
  • 1/4 cup pure honey
  • 1 tsp. toasted sesame oil
  • Cooked rice
  • Toasted sesame seeds, for garnish

Directions

    1. Step 1 Preheat oven to 400°F. Lightly coat a sheet pan with cooking spray. Combine chicken, scallions, egg, breadcrumbs, garlic, sesame oil, and soy sauce in a bowl. Season with pepper. Form the mixture into 10 meatballs and place on prepared pan. Lightly grease meatballs with cooking spray. Bake until cooked through, 18 to 20 minutes.
    2. Step 2Meanwhile, make sauce: Whisk together cornstarch and 2 teaspoons water in a large saucepan. Whisk in stock, honey, soy sauce, garlic, ginger, vinegar, honey, and sesame oil. Cook over medium-low heat, whisking, until mixture bubbles and begins to thicken, 1 to 2 minutes. Remove from heat. Add meatballs and toss to coat. Serve over rice, garnished with scallions and sesame seeds.
