Ingredients

  • 1 (15-ounce) can rinsed white beans
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 6 Peppadew peppers, chopped
  • 2 scallions, thinly sliced
  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • Kosher salt and black pepper

Directions

    1. Step 1Toss together beans parsley, peppers, scallions, olive oil, red wine vinegar, and kosher salt and black pepper in a bowl.

This recipe can be made ahead and chilled up to 6 hours. Add parsley just before serving.
