Ingredients

  • 1 Tbsp. olive oil, plus more for bowl
  • 1 3/4 cups cool water
  • 1 Tbsp. plus 1 teaspoon kosher salt
  • 1 1/2 tsp. active dry yeast
  • 1 tsp. sugar
  • 4 1/2 cups all-purpose flour, spooned and leveled, plus more for dusting and work surface

Directions

    1. Step 1Lightly oil a bowl. Whisk together oil, water, salt, yeast, and sugar in a second bowl. Add 4 1/4 cups flour and stir with a wooden spoon until a ball forms. Turn dough out onto a well-floured work surface and knead, adding up to 1/4 cup more flour as needed, until you have a smooth, not sticky, ball, about 3 minutes. Transfer to prepared bowl and cover with plastic wrap. Let rise at room temperature until doubled in size, 3 to 4 hours, or refrigerate for up to 24 hours.
    2. Step 2Lightly flour a rimmed baking sheet. Turn dough out onto a well-floured work surface and knead until smooth and firm, about 30 seconds, adding more flour if dough becomes too sticky. Cut dough into 4 equal pieces. Knead each until smooth and pull edges underneath to make a plump ball. Transfer to prepared baking sheet and cover with a lightly dampened dish towel. Let rest at room temperature until doubled in size, 30 minutes to 1 hour. Dough is ready when it feels smooth and returns to shape when pressed with a finger.

Recipe yields 4 (8-oz) portions dough, enough to make 4  12-inch pizzas .
