Ingredients
- 3 cups fresh corn kernels
- 2 cups baby arugula
- 4 oz. feta crumbled
- 2 Tbsp. Chopped fresh oregano
- 1/3 cup olive oil
- 3 Tbsp. red wine vinegar
- Kosher salt and freshly ground black pepper
- 2 lb. tomatoes, sliced
Directions
- Step 1Combine corn, arugula, feta, oregano, oil, and vinegar in a bowl. Season with salt and pepper.
