Carrot and Cucumber Slaw

A julienne peeler gives this salad gorgeous texture and serious crunch, but no special tools are required. Thinly slicing the carrots and cucumber works beautifully, too.

Ingredients

  • 2 Tbsp. white miso
  • 3 Tbsp. unseasoned rice wine vinegar
  • 1 Tbsp. fresh lime juice
  • 1 tsp. roasted sesame oil
  • 1/4 cup canola oil
  • Freshly ground black pepper
  • 1 lb. carrots, cut with a julienne peeler
  • 1 English cucumber, cut with a julienne peeler, stopping at the seeds
  • 3 scallions, halved crosswise then thinly sliced lengthwise
  • 1/2 cup chopped salted peanuts
  • 1/4 cup chopped fresh mint

Directions

    1. Step 1Whisk together miso, vinegar, lime juice, and sesame oil in a bowl. Slowly whisk in canola oil. Season with pepper. Add carrots, cucumber, scallions, peanuts, and mint; toss to combine. Serve immediately.
